| CAKE DECORATING 101 This class is for beginning decorators who will learn the fundamentals of baking professional cakes, how to make a variety of various icings and fillings, their properties and how they are used. You will learn basic decorating techniques as well as which tools to use to be successful. Students will prepare classic butter cake batter and bake layers which they will later use to learn how to properly level, split, fill and ice their cake. You will then use your acquired decorating skills to decorate your cake. Techniques covered: baking, making icings (royal icing, Swiss meringue buttercream), splitting, filling and crumb coating, final coating, shell borders, stars, writing, and others as time allows. |

| INTERMEDIATE CAKE DECORATING Review of CAKE 101 basics with a discussion of cake, fillings and icing properties and how weather affects them. You will split, fill and crumb coat (SFCC) an 8” cake (provided. You will make a variety of royal icing flowers including Violet, Apple Blossom, Daisy, Primrose and you will complete the classic rose to decorate your cake. You will use royal icing extensively and you will be introduced to the petal, luster and pearl dusts we use to “paint” royal icing, gum paste, fondant cakes and accessories. We will continue practicing shells, swags, basketweave, stacked borders, and various side designs. If time allows, we will discuss the architecture of tiered cakes, tools and equipment necessary to successfully stack & secure tiers. This class is preparatory to Advanced Cake Decorating. |

| ADVANCED CAKE DECORATING Brief review of CAKE 101 and INTERMEDIATE CAKE. We will concentrate on tiered cakes in this class and you will split, fill and crumb coat (SFCC) and final coat one each 8” and 5” cake (provided) and prepare them for stacked construction. You will complete the cake with all of the skills you have learned in this and our previous two classes. We will thoroughly cover doweling and the internal structure of stacked cakes and will briefly discuss “Mad Hatter” style or crooked cakes. Color flow work, basket weave, rope borders, reverse shell, pearls and stacked borders will be thoroughly covered and practiced. A certificate of completion will be provided to those students who attend all three sessions. |

| FONDANT 101 This class will concentrate on the properties and uses of fondant including coloring, storing, covering a cake and fondant borders. You will split, fill and crumb coat (SFCC) an 8” cake (provided) and will cover and completely decorate a fondant covered cake during class. Techniques covered: fondant borders, drapes, molding a fondant (fabric) rose, rosebud and leaves, fondant lace and appliqués and fundamentals of color and various powdered food colorings used to paint and decorate fondant and gum paste. You will use Royal icing in this class. |

| ADVANCED FONDANT Review of the fondant basics. We will concentrate on bows, swags, drapes, tassels, use of molds, cutters and embossers to create unique borders and designs. You will split, fill and crumb coat (SFCC) one each 9” and 6” dummies, cover them both with fondant, stack the tiers and use fondant to decorate them. Techniques covered: tiered cakes, advanced borders, lace appliqué, embroidery, string work, fondant cutouts and appliqués and more. The dummy you produce will constitute your final exam in the cake decorating series. |

| SUGAR ARTS 101 You will learn the basics, properties and uses of gum paste, get an understanding of basic floral skills, and the basic techniques used to create beautiful roses, rose buds, rose leaves, violets, paper whites and a large floppy bow. You will learn how to make basic vessels to hold your flowers. We will produce a cake topper complete with decorated vase, flowers, leaves, handle and bow. |

| INTERMEDIATE SUGAR ARTS You will build on the basics of sugarcraft flower making by making more roses, carnations, a cattalya orchid as well as jasmine, daisies, jonquils and others. We will make Tylose gum paste and use it along with our rtu gum paste. You will make a topper and a plaque, monograms and bows. We will tape our flowers into a large spray for a cake or vase which you will take home. Introduction to figure molding of people and animals will be covered as well as other subjects as time allows. |

| ADVANCED SUGAR ARTS You will learn to construct 2 more orchids: cymbidium or dendrobium and moth orchid as well as star gazer lily, freesia, forget-me-nots, lilacs and dogwoods and their foliage. You will review various roses, additional plaques and learn more advanced techniques. We will cover balance and color choices in sprays and bouquets. During this 3 day class you will complete a full dummy as well as a spray or bouquet to decorate it. This class will constitute your final exam in the Sugar Arts series. |

| ROSE MASTER CLASS You will learn to create in gumpaste a wide variety of roses. This class will include the quick rose, wild rose, Queen of Denmark rose, other traditional roses, climber and rambler roses, modern roses and others as well as the buds and leaves of each rose. If you want to make roses don't miss this class! We will make a rose topper for a cake and a spray, bouquet, flower pot or vase topper. |

| CAKE BAKING ESSENTIALS This class is for beginning bakers who will learn the fundamentals of baking homemade cakes from scratch. You will learn how to properly weigh and measure ingredients, master the various methods of caking baking and be able to produce delicious desserts. You will be given my recipes which have been proven to be successful. |
